Banana Bread As Muffins

Full question

I love Nigella's Banana Bread recipe and would like to use it to make muffins. Can you tell me how many muffins this quantity of mix would make and also cooking time and temperature please. Thanks in anticipation!

Our answer

Unfortunately we have not tried Nigella's Banana Bread (from DOMESTIC GODDESS and on the Nigella website here) in muffin form so cannot guarantee any results, but it is liklely that the mixture will make 10-12 muffins (if the muffin papers are filled to just over halfway) and the baking time would be 15-20 minutes at 200c/400F.

However Nigella has two extremely good banana muffin recipes that you may prefer to try instead. The Banana Butterscotch Muffins (from NIGELLA EXPRESS and on the Nigella website here) could be made with 100g sultanas (soaked in bourbon as in the Banana Bread recipe) and 50g chopped walnuts or pecans, instead of the 150g of butterscotch morsels. Alternatively try the Chocolate Banana Muffins (from KITCHEN and on the Nigella website here) which are wonderful just as they are.
