Banoffee Cheesecake & Banana Muffins

Hi, I've recently saw in a recipe posted that Nigella makes a banoffee cheesecake pie and would love to make it for my husband. We live in China so I have some of your books that I have schlepped all the way here from the States but the recipe is not in any one of them.. could you please post it and help me?! Bannoffee pie is his favourite and I just think that if you add the cheesecake it would be heavenly Many thanks Claudia

I have tried the recipe in "Domestic Goddess" for Banana Muffins (p219) twice and it has been a failure both times. Is there a printing error? My copy makes no mention of eggs or milk. Can you help? Ladybird.

Unfortunately we don't have the space to post full recipes in this section but the Banoffee Cheesecake can be found in Nigella's new book Kitchen on p133-4. For the best flavour we would suggest using overripe bananas - ones with plenty of black spots on them. If you find that you have very ripe bananas sitting around but don't have time to bake with them immediately then you can peel them, seal them in a plastic freezer bag and freeze them. Thaw for 1-2 hours before mashing and using in your chosen recipe.

For the banana muffins bananas are sometimes used in lieu of eggs as they add moistness though they won't provide the same rise as eggs will in a recipe. Consequently the banana muffins will be denser than a more traditional, cake-like muffin. If you would like an more aerated muffin then we would suggest trying the Chocolate Banana Muffins from Kitchen (p138 and on this website - see link below). They rise beautifully and thanks to the banana in them they are moist and will keep for a couple of days.
