I'd like to make the Cauliflower, Garlic and Turmeric Soup, but trying to economise on using my oven! Can I microwave the garlic bulb instead of roasting it?
Our answer
Nigella's Cauliflower, Garlic And Turmeric Soup uses roasted garlic as this gives the soup a mellow, slighty sweet and caramelized flavour. The garlic is roasted in the oven, but we do understand that it can be difficult to switch the oven on just to cook a bulb of garlic. Whilst you can microwave garlic, it is also very easy to burn the garlic in the microwave and and as we have not done this ourselves for the recipe, we prefer not to recommend that method. Instead, mince 2 cloves of garlic and add them to the onions once they have softened. The flavour will be slightly different, but delicious nonetheless.
We would also suggest roasting some garlic next time you have the oven on. For example, when roasting a chicken the garlic can be cooked in its foil parcel on the shelf below. Once the garlic is cooked, cool slightly and squeeze the pulp into a suitable container, cover tightly and store in the fridge for up to 5 days. The pulp can also be frozen for up to 3 months and either used from frozen in soups and stews, or thawed overnight in the fridge before use.
