Can I mix the ingredients for the Toasty Olive OIl Granola (including maple syrup and olive oil) and then bake later in the day?
Our answer
Nigella's Toasty Olive Oil Granola (from SIMPLY NIGELLA) is less sweet than some granolas as it doesn't contain dried fruits and is sweetened only with maple syrup. It is possible to mix up the ingredients in advance and bake later, but we would probably not leave the unbaked mixture to stand for more than a few hours as the rolled oats will soften over time.
If you need to mix up the granola ingredients more than 3-4 hours before baking, it is probably better to mix all of the dry ingredients in one bowl and leave the measured out oil and maple syrup in a separate bowl. Then just mix the oil and syrup into the dry ingredients before you bake the granola. This will only take a few moments and can be done while the oven is heating up. Once the granola is fully cool, transfer it to an airtight container. It should keep for about a month in a cool, dry place.
