Can I use chicken legs instead of thighs for the Chicken Barley? They are easier for me to find than chicken thighs on the bone. What would be he equivalent of six thighs?

Nigella's Chicken Barley (from AT MY TABLE) is a comforting cross between a soup and a stew. Chicken thighs are cooked on the bone as this adds more flavour to the overall dish. The thighs are then removed and the tender meat is shredded and then returned to the pot.
It would be possible to use chicken legs (i.e. thigh and drumstick together) instead of just thighs, but we would suggest separating the drumstick from the thigh. It is easy to do this by cutting through the joint with a sharp, heavy knife. The skin should still be removed and the cooking time will be the same. You will probably need 4 chicken legs instead of 6 thighs to give approximately the same amount of shredded meat.
