Nigella's Triple Cheese And Onion Strata (from NIGELLA CHRISTMAS) is a cheesy, savoury bread pudding that is perfect for a Christmas brunch as it can be assembled the night before and then baked when needed. It is made with a trio of cheeses: cheddar, Parmesan and fresh mozzarella. Cheddar and Parmesan both have very low levels of lactose and can sometimes be tolerated by those who cannot eat fresh cheeses, but you should always check with the individual concerned as to their own preferences.
The recipe asks for 50g Parmesan, 100g cheddar and one ball of mozzarella. A ball of mozzarella in the UK weighs 125g. So in total you need 275g cheese (about 2 3/4 cups grated cheese). If not using Parmesan then you may need to add a pinch or two of extra salt. The recipe also needs 100ml (7 tablespoons) sour cream and you can sometimes find lactose free sour cream, otherwise subsititue this with a lactose free milk.
