Our answer

Nigella's Coriander And Jalapeno Salsa (from AT MY TABLE) is a fresh greeen sauce (similar to a fresh green chutney) that is a great accompaniment to most meats and fish. Although it looks cool and green, it is actually quite spicy thanks to the inclusion of whole jalapeno chillies. The sauce is blended with a neutral vegetable oil, which gives the sauce body as well as making it a spoonable sauce.

We would prefer not to use yogurt in this sauce as dairy tends to dull the heat of chillies. One of the protiens in milk, caesin, offsets the effect of capsaicin (the component that gives chillies heat). You could try replacing some of the oil with water, though we would suggest not much more than 50ml (3 tablespoons) as the sauce will become thinner in consistency. Adding water will also mean that the salsa will separate more as it stands in the fridge and will need more vigorous shaking to re-emulsify it.
