Freezing Chocolate Gingerbread

Full question

I have made the Chocolate Gingerbread and wonder if it can be frozen as a generous amount has been made.

Our answer

Nigella's Chocolate Gingerbread (from FEAST) is a moist and sticky spiced chocolate cake that is covered in a chocolate glace icing. The cake itself freezes very well but unfortunately glace icing can sometimes become quite sticky and slightly wet when it defrosts. The icing also doesn't usually freeze solid so the cake slices need to be packed more carefully.

Un-iced cake slices can be wrapped in a layer of clingfilm and then put in an airtight container and frozen. If the cake is iced then put the slices in a single layer in an airtight container (or containers) and freeze. Both can be frozen for up to one month and slices should be thawed at room temperature for about 2 hours.
