My Mum loves the Clementine Cake cake and it's so easy to make. Could I turn it into a special birthday cake, two or three layers and then covered in fondant icing? Would it work? Has anyone tried this?

Nigella's Clementine Cake (from HOW TO EAT) is a moist, gluten free cake. Unfortunately we can't recommend layering the cake as it is gluten free and quite delicate, so to try and cut or stack the cake is more difficult. The cake also tends to sink slightly in the centre, which would make it less attractive as a layered cake.
Fondant icing is also not ideal for this cake as it is quite a moist cake and the moisture in the cake will start to dissolve the sugar in the fondant icing, making it "melt" and slide off the cake over time. We would suggest maybe giving the cake a last minute dusting of icing sugar or maybe adding a few slices of candied orange before serving.
