Full question
Would semolina work in place of polenta for the Blackberry Galette?
Our answer
Nigella's Blackberry Galette (from HOW TO BE A DOMESTIC GODDESS) is a type of free-form tart topped with creme fraiche and blackberries. The pastry dough for the tart includes some polenta as this gives the pastry a crisp, short texture. Polenta is made from ground maize.
Semolina is made from coarsely ground hard durum wheat. We suspect that in this particular recipe it could be used as a substitute for the polenta as it is often used in baking and pasta making. As the semolina is coarsley ground it will not absorb much liquid, so the pastry should still have a crisp texture. However as we have not tried the recipe with semolina, we are unable to guarantee the results. Also, if you have some semolina in the cupboard you may like to try Nigella's recipe for Mock Mash.
