For the Ultimate Christmas Pudding, should I refresh it with more PX Sherry between the two steamings?
Our answer
Nigella's Ultimate Christmas Pudding (from NIGELLA CHRISTMAS) is usually mixed and steamed for the first time around 6 weeks before Christmas Day. The fruits for the pudding are soaked in the rich and raisiny Pedro Ximenez sherry.
As the pudding is cooked by steaming, which is a moist method of cooking, there is little risk of the pudding drying out and so it does not need to have extra sherry added while it is stored. You can add a little extra if you really want to, but as the pudding is unlilkely to absorb much of the liquid we would suggest using only a very little sherry. However, do make sure that the pudding is stored either tightly wrapped, or with the lid clipped firmly in place, in a cool, dry place.
