Nusheen's Entry

Growing up in Bangladesh, peanut butter wasn't as readily available as it is now,let alone candies like Reese's peanut butter cups! These were rare treats, lovingly brought to us by relatives living abroad and shared with friends during lunch break. However, while peanut butter had a late entry, the peanut itself was one of the more popular snacks in our country. It was common to find family and friends spending lazy afternoons, shelling and eating peanuts that had been expertly roasted in hot sand by roadside vendors. Then, there was our take on the peanut brittle, mixing in local jaggery and sometimes a cheeky hint of cardamom. Almost every other household had a jar filled with these jewels, ready to be nibbled on after meals. This recipe itself was a breeze to follow and resulted in a cake that was both decadent and refreshingly light. It paired wonderfully with traditional bengali peanut brittle. A petit tiered cake that was adorably delicious!
