I'm from the US, but I left my heart in the UK. Four years ago I was in Glasgow relishing in a delicious afternoon tea at The Butterfly and The Pig - robust sandwiches in place of the typical finger sandwiches, house made crisps and to top it all off, a slice of chocolate Guinness cake. Living in lockdown for over a year now, I wanted to do something special for my birthday and treat myself to a proper afternoon tea. Naturally, I turned to Nigella. I made simple tweaks to give it some afternoon tea flair. I baked it in a 9" x 13" pan and used a round cutter to create mini cakes. Then I tipped a little Irish cream into the frosting which I carefully piped for a picture perfect finish. A single bite of this cake carried all the nostalgia of my once perfect afternoon in Glasgow. In these unsettling times, it was a glimmer of comfort and a reminder that we can still find moments of magic in the every day.
