Lemon Pavlova sprinkled with toasted almonds; the perfect texture pairing with the marshmallowy goodness that awaits inside. Topped off with vibrant raspberries for a burst of colour, as well as counterbalancing the sweetness of the lemon curd tucked underneath the luscious cream topping. The process itself was straight forward as I followed the Nigella recipe closely. The only time I differed slightly was when I arranged raspberries on top, before scattering the toasted almonds. I also whisked a little Vanilla Essence into the meringue. When forming the Pavlova shape, there was more meringue than anticipated so it came out a lot larger than expected, but waste not want not, I just decided it would be a large Pavlova, more to share!
