- 450 grams plain flour
- 1 teaspoon salt (I use a bit more)
- 1 teaspoon bicarbonate of soda
- 499 millilitres buttermilk
- 16 ounces all-purpose flour
- 1 teaspoon salt (I use a bit more)
- 1 teaspoon baking soda
- 17½ fluid ounces buttermilk
Method

- Preheat the oven to 220 C / 425 F / Gas Mark 7. Lightly grease a baking sheet.
- Sift the dry ingredients into a mixing bowl.
- Make a well in the centre, pour in most of the buttermilk and mix well, using your hands. The dough should be very soft but not too wet. If necessary, add the remaining buttermilk.
- Turn out the dough onto a floured surface and knead. Shape into a 20 cm / 8 inch round.
- Place the bread on the prepared baking sheet, cut a cross across the top and bake in the preheated oven for 25 - 30 minutes.
