Megan's Mango Salsa

Put the mango, cucumber, jalapeno and mint in a bowl. In a second bowl, mix together the lime juice, brown sugar, and ginger. Pour over the mango mixture, and mix well. Serve with fish or chicken.
Introduction
This is my favorite salsa to serve with grilled fish - the mango and jalapeno give it a nice zip!

Serves: 4
- 2 cups diced mangos
- 2 cups diced cucumber
- 1 jalapeno peppers (seeded and sliced)
- ½ cup chopped fresh mint
- ½ cup lime juice
- 1 tablespoon soft brown sugar
- 2 teaspoons grated fresh gingerroot
