Summer Lavash Wraps

Assemble lines of Lavosh sheets, and spread them with butter, cream cheese, mascarpone, feta, mayo, mustard; each sheet gets a different spread to make a variety of wraps. Add walnuts or pistachios to the cream cheese, mascarpone, and feta. Add herbs. Roll lavash sheets into logs and cut into bite sized sandwiches. Continue making tomato, pickles, cheese, and herbs wraps. Next, you can make turkey and cheese with lettuce leaves, mayo and mustard. To be more creative, you can always sprinkle walnut or pistachio pieces over the mayo spread and wrap with turkey and cheese. To hold wraps from falling apart, insert sandwich toothpicks through them.

Ingredients
Serves: Makes 40 wraps for a picnic to
- 1 cup minced mint
- 1 cup chopped walnut pieces
- 8 ounces crumbled feta cheese
- 8 ounces mascarpone cheese
- 8 ounces cream cheese
- 1 stick butter (at room temperature)
- 2 packets large, flat lavash bread sheets (white or wholewheat)
- 1 cup minced fresh parsley
- 1 cup minced fresh basil
- 4 large sliced thinly tomatoes
- persian pickles (or English gherkins - a jar)
- 4 ounces mayonnaise
- 4 ounces mustard
- 1 packet smoked turkey (or honey-cured, sliced)
- 6 large lettuce

Additional Information
These wraps keep well in the fridge and ice box. Package them tightly with plastic wraps. Serve with chilled drinks, fruit slices, and chips.
