Indonesian Spice Cake

Butter a 20 cm round cake tin. Combine the sugar, baking powder and flour in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Spread half the mixture in the prepared cake tin. In a saucepan, heat the milk with the vanilla bean to just below boiling point. Turn off the heat and allow the milk to stand for 10 minutes then remove the vanilla bean. Dissolve the bicarbonate soda in the milk and mix in the olive oil, beaten eggs and ground spices. Add this to the remaining crumb mixture and mix well. Spoon the mixture into the prepared cake tin and bake in a pre-heated 180 ºC oven for 1 hour.

- 2 cups all-purpose flour
- 4 ounces butter (at room temperature)
- ½ cup milk
- 1 vanilla bean
- 1 teaspoon baking soda
- ½ cup olive oil
- 2 medium beaten eggs
- ½ teaspoon nutmeg
- ½ teaspoon ground cinnamon
- ½ teaspoon cardamom powder
