Plov (Chicken and Rice Pilaf From Uzbekistan)

Introduction
Plov is a traditional dish of Uzbekistan but it is loved and cooked in many countries of ex Soviet Union, like in Russia, Ukraine, Kazakhstan .. It's delicious dish which family enjoys over the table. It's mainly done with fat, onion, carrot, rice and meat (lamb, beef or chicken). The recipe I propose is made with chicken. That's how my mom cooks it and that's how I love it. If you google, you'll certainly find different versions of this recipe and all of them are good. Here is my mom's recipe:

Ingredients
Serves: 6
- 2 finely sliced onions
- 4 diced carrots
- 6 chicken breasts
- 3 cloves garlic
- salt
- pepper
- 3 cups rice
- 6 cups hot water
- ¼ cup vegetable oil
Method

- Place rice in a dish with cold salted water and let it soak for 30 minutes.
- Heat the oil in a large fry pan or heavy pot on high heat. Brown chicken breasts. Then add sliced onions and carrots. Stir fry them until they are browned and ready. Add salt and pepper. Turn the fire to low, and stir for 3-5 minutes.
- Place rice. Pour over hot water and bring to boil over a high heat. Add garlic cloves. Reduce the heat to low, cover, and simmer for 25 minutes. The water should be evaporated and the rice should be cooked.
- Do not mix rice and chicken. When the rice is cooked, take off from heat and let it sit for 10 minutes. Do not forget to remove garlic cloves.
Additional Information
You can also add ¼ cup of raisins and ¼ cup of chick peas
