Can I Make Liquorice Pudding With Liquorice Powder?

The Liquorice Pudding sounds delicious but I only have liquorice root powder. How much would I use instead of the pellets? Thank you.

Nigella's Liquorice Pudding (from NIGELLISSIMA) is a liquorice-flavoured softly-set pudding. The liquorice flavour comes from melting liquorice pellets in a little water before adding the cream and other ingredients.

It may be possible to use powder instead, but unfortunately the powders vary a lot in terms of how fine they are. And without knowing the specific strengths of the powders, it is hard to know the amount to use for the recipe. You could try mixing 1 teaspoon of fine liquorice powder with the warm water then add it to the sugar and cream and taste the mixture to see if it suits your taste, then add a little extra if necessary (bearing in mind that the flavour will become slightly muted once the pudding has chilled). The coarser types of liquorice powder that are often used for tea or infusions will affect the texture of the pudding too much and we would not suggest using these.
