Can I Use A 2lb Loaf Tin For Marzipan Loaf Cake?

Asked by G3r4ld1n3. Answered on 7th December 2021

Full question

The Marzipan Loaf Cake is made in a 1lb loaf tin. Is that the really small one? Should this say 2lb loaf tin? I only have one loaf tin in my kitchen and I think it is a 2lb one, which is what I usually use for a loaf cake. Please could you clarify for me? I can't wait to make this cake.

Our answer

Nigella's Marzipan Loaf Cake (from COOK, EAT, REPEAT) is a moist, almond-flavoured gluten-free cake that is wonderful eaten by the slice, or toasted and served with berries and cream as a dessert. The cake is made in a 1-pound (450g) loaf tin, which is a smaller size of loaf tin.

The dimensions of loaf tins vary enormously and there can be crossover in the description and sizes. The tin used by Nigella for this recipe has internal measurements of 17cm x 12cm x 7.4cm (6¾ x 4¾ x 2¾ inches). You don't need to use a tin with the exact same measurements, just as long as they are fairly similar. Unfortunately as many 2-pound (900g) loaf tins are approximately 23cm x 13cm x 7.5 cm (9 x 5¼ x 3 inches), they would be slightly too big for the cake, though if you do use a larger tin then bear in mind that the cake will be slightly squatter and the baking time may be shorter.
