Which Liquorice Pellets Should I Use For Liquorice Pudding?

As I am intruiged by the Liquorice Pudding recipe, I have ordered the liquorice pellets online. I’ve ordered both with and without aniseed flavour because Nigella is mentioning that the pellets have a strong anise flavour, which I find the regular ones have not. So which ones should I use?

Our answer

Nigella's Liquorice Pudding from NIGELLISSIMA) is made with pure liquorice pellets. There are several brands that can be used and the recipe suggests an Italian brand as guideline, though any pure liquorice pellets can be used. Liquorice pellets can be most easily found on-line.

The pellets used by us are just pure liquorice and not flavoured with aniseed, as we find the flavour strong enough. If you are a big lover of aniseed then you may want to use the aniseed-flavoured ones to suit your personal taste, though for a first try you may prefer to use half regular pellets and half aniseed flavoured, just to make sure that the overall flavour is not too strong.
