I couldn't go past attempting this recipe, since I LOVE ❤️ baked cheesecake and have had a tin of Canadian maple syrup in my cupboard for years. So, in order to declutter my pantry (but sadly not my waist! ????), I made this sumptuous cheesecake. It is quite smooth and delectable, and goes very well with fresh raspberries, which add acidity, texture and colour, and are delightfully reflected in the glossy maple syrup topping.
