I know that I pushed it to the last minute, but it seemed like the perfect time to try my hand at baking a delicate lemon tender cake. We gathered for a braai with a small group of friends, and considering the intense heat in South Africa, I envisioned this treat as the ideal refreshing dessert. Opting for individual-sized cakes to accommodate the group, I took into account that not everyone is fond of coconut, so I opted for a tangy lemon icing adorned with fresh blueberries. Let me tell you, the reaction to this delectable tender cake was nothing short of awe. The room fell silent during its consumption, and saying it was well-received is an understatement.
