Poach the smoked haddock fillets. Remove from pan and leave to cool at room temperature. Sauté the onion and garlic Add lemon juice, and then the curry powder and turmeric to create a paste. Fold in the cooked rice and season to taste. Break the fish up with fingers, and fold lightly into the rice with the chopped herbs. I usually add a good handful but this depends on personal taste. Stir in the heavy cream, and season again if necessary. Turn into a serving bowl and decorate with quartered hard-boiled eggs and serve.
Introduction
This is a VERY simple version of the original recipe that was modified by my mother. It tastes delicious and is very easy to prepare - the perfect comfort food! I've listed it as a main course as it is filling and a great supper, but I've also served it in very small portions as a starter (an alternative to risotto!) It's also a great way to use up left over boiled rice

Serves: serves 3-4
- ½ finely chopped onion
- 1 clove finely chopped garlic
- ½ lemon juice
- 2 teaspoons curry powder
- ½ teaspoon turmeric
- 2 smoked haddock (non dyed)
- 3 cups basmati rice (cooked)
- 1 handful cilantro
- 1 handful fresh parsley
- 4 tablespoons heavy cream
- 3 medium boiled eggs
