Fresh Lemon Jelly

Bring water, sugar and zest to boil, boil for a few minutes. Meanwhile whisk together gelatine and cup of lemon juice in a large jug. When syrup has boiled whisk it in to the gelatine mix. Stir well. Then add the extra lemon juice, stir well once more to combine. Strain mixture into individual serving bowls (or one large one) and refrigerate until set.
Introduction
We always have an abundance of lemons, this is an easy way to get a lovely refreshing sweet from them. Makes about 6 cups.

- 3½ cups water
- 1 cup sugar
- 1 cup lemon juice
- 1 ounce gelatine
- 1 lemon zest
- ¾ cup lemon juice (extra)
