Ingredients

Serves: 6 - 8

Metric Cups
  • digestive biscuits
  • unsalted butter (soft)
  • milk chocolate chips
  • coffee ice cream
  • golden syrup
  • bourbon
  • light brown muscovado sugar
  • double cream
  • graham crackers
  • unsalted butter (soft)
  • milk chocolate chips
  • coffee ice cream
  • golden syrup or light corn syrup
  • bourbon
  • light brown sugar
  • heavy cream

Method

  • Process digestive biscuits with soft unsalted butter. Add chocolate chips.
  • Press in to a flan dish and place in freezer to firm up
  • Pour over softened coffee flavour ice cream.
  • Cover with cling film and return to freezer.
  • Add golden syrup to a saucepan with butter and muscovado sugar. Bring to the boil and let bubble for 5 mins. Add bourbon and cream.
  • Let it cool but not set, and pour over ice cream
  • Process graham crackers with soft unsalted butter. Add chocolate chips.

    • If you read Nigella's recipe she does use Bourbon - the drink - as she mentions the number of spoonfuls she uses.

    • Nigella didn't use Bourbon the drink, in this recipe but bourbon biscuits!
