Ingredients

Serves: 8

Metric Cups
  • 250 grams flour
  • 95 grams caster sugar
  • 1 teaspoon baking powder
  • 3 tablespoons golden syrup
  • 1 teaspoon vanilla extract
  • 1 egg
  • 65 grams butter
  • 160 millilitres full fat milk
  • 8 teaspoons golden syrup
  • 9 ounces flour
  • 3 ounces superfine sugar
  • 1 teaspoon baking powder
  • 3 tablespoons golden syrup or light corn syrup
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 ounces butter
  • 5⅝ fluid ounces whole milk
  • 8 teaspoons golden syrup or light corn syrup

Method

Golden Syrup Muffins is a community recipe submitted by Violet and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

You will need a 6 cup muffin tin, and muffin cases.

  • Pre heat the oven, 160 (fan oven)
  • Mix all the dry ingredients together in a bowl.
  • Melt the butter in the microwave then beat in the egg, then the milk and golden syrup and vanilla extract.
  • Add the egg mix to the dry ingredients and lightly mix.
  • Spoon a blob into muffin case then add 1 teaspoon of spreadable golden syrup, then cover with another blob of mixture, repeat until all the cases are filled.
  • Cook in the middle of the oven for about 35 mins or until golden.
  • Serve while still hot, with a steaming cup of tea or coffee. They would also be great turned into a pudding with a big dollop of custard.

    • Didn't have any vanilla extract would of been better with it, but still taste good! Mixture seems really thick but it's ok.
