Ham and Olive Bread

Pre-heat the oven to 425°F / 220°C / Gas mark 7. In a large bowl, sieve in the flour, baking powder and salt together. In a smaller bowl, break in the eggs. To the eggs, add the olive oil and white wine, and whisk together. Pour the egg mixture to the flour, and mix to obtain a smooth lump-free batter. To the batter, add the chopped ham, olives, and the cheese. Mix well. Then pour the mixture to a greased loaf tin, and even out the top. Bake in the oven for 45 – 50 mins. (check with a skewer!)

- 210 grams plain flour
- 2½ teaspoons baking powder
- ¼ teaspoon salt
- 3 medium eggs
- 70 millilitres olive oil
- 100 millilitres white wine
- 500 millilitres ham (chopped)
- 375 millilitres green olives (pitted)
- 500 millilitres Gruyere cheese (shredded)

Additional Information
Be careful with the salt, as it has already got ham and olives to make it a little salty. You can omit the salt altogether if you don't prefer excess salt.
