Ingredients

Serves: 2

  • 12 ounces roasted chestnut (peeled)
  • 1 cup granulated sugar
  • 2 cups water
  • 1 tablespoon vanilla

Method

Home Made Sweet Chestnut Puree is a community recipe submitted by Krakra58 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • In a saucepan, combine nuts, sugar and water and bring to a boil. Reduce heat to medium-low and simmer for 25-35 minutes until the majority of the liquid is evaporated.
  • Remove from heat and add the vanilla.
  • Strain the chestnut, reserving the sugar syrup and transfer to a food processor and blend until smooth.
  • Add syrup slowly until desired consistency is obtained.
  • Allow to cool before refrigerating.

    • Way too much water! I made chestnut puree myself without a recipe after foraging for sweet chestnuts - it was perfect. Thought I'd check and see what proportions were suggested. I'd guesstimate that 50 mls and add if necessary rather than 500mls of liquid. I had to add in another batch of chestnuts and then heat for another 20 minutes.
