Mussels in a Creamy Curry Sauce

Heat oil over medium heat. Add onion, garlic and ginger. Stir for 3 min. Add curry, cook for 30 seconds. Pour in wine and bring to simmer. Add mussels until open 5-7 min. Remove and keep warm Bring liquid to boil over high heat and reduced a little. Pour in cream boil for 2 min. Pour over mussels.
Introduction
This is so simple and quick to prepare. Makes a great starter best enjoyed with lots of crusty bread to mop up the sauce.

- 2 pounds mussels
- 2 tablespoons vegetable oil
- 1 onion
- 2 cloves minced garlic
- 2 teaspoons finely chopped fresh gingerroot
- 1 tablespoon curry powder
- ½ cup dry white wine
- 1 cup heavy cream
- salt
- pepper
- 2 tablespoons chopped scallions (for decoration)
