  • 2 kilograms pumpkin
  • 4 oranges (sweet and juicy)
  • 1 lime (juice of)
  • 1½ kilograms sugar
  • 2 centimetres fresh ginger
  • 4⅖ pounds pumpkin
  • 4 oranges (sweet and juicy)
  • 1 lime (juice of)
  • 3⅓ pounds sugar
  • ⅘ inch fresh gingerroot

Method

Pumpkin Orange Marmalade is a community recipe submitted by Willemeijn and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Cook the pumpkin in water for about 20 min.
  • Peel the oranges. Remove the white parts from the skin.
  • In a separate pot, prepare 1/2 glass of water with two spoons of sugar, and cook the orange peels in it until they are soft (about 15 min). Cut the peeled oranges into pieces.
  • When the pumpkin is soft, remove the skin and mix/smush the pumpkin (do not puree). Cook the pumpkin, oranges, orange peels, and lime juice in the syrup for 20 min.
  • Add the shredded ginger and more sugar and some gelatine, and let slowly boil for another 20 min.
