Soccermole

In celebration of the World Cup, and as tradition decrees, I suggest by way of a sofa-side snack my Soccermole. This, you won't be surprised to learn, is a version of Guacamole, by way of my proudest creation, Roquamole (avocado and blue cheese). Soccermole needs a mere trio of ingredients — avocado, spring onions and, for kick, horseradish sauce — which may sound suspect, but together create something both soothing (the cool, bland balm of the avocado) and uplifting (the feisty fire of the horseradish) which I rather feel will be in order. I like a nervous handful of tortilla chips for dippage, but grissini, sugar snaps and assorted crudités work well too.
For US cup measures, use the toggle at the top of the ingredients list.

- 70 grams horseradish sauce (creamed)
- 2 ripe avocados
- 3 spring onions (finely sliced)
- ¼ teaspoon paprika
- 1 packet tortilla chips (or other dippable items)

Method
- In a bowl, mash the creamed horseradish with the ripe avocados, a fork is probably best for this.
- Stir in the finely sliced spring onions and arrange in a wide shallow bowl.
- Sprinkle over the paprika and then serve with the tortilla chips.

Delicious this went down a treat I loved the addition of horseradish cream. This is so simple to make it will be my go to mole dish from now on.
