Syrniki or Fried Cheese Pancakes

Introduction

Syrniki are fried curd fritters, garnished with sour cream, jam, honey, and/or apple sauce. They can be filled with raisins. In Russia they are also known as tvorozhniki (??????????). Syrniki are made from the full-fat, creamy cottage cheese, crumbled and mixed with flour, egg, milk, and sugar and fried, generally in a flavorful unrefined sunflower oil. The outsides become very crispy, and the center is warm and creamy. They are sweet and served for breakfast or dessert.

Serves: 8-10 serves

  • 18 ounces cottage cheese
  • 1 cup all-purpose flour
  • 1 egg
  • 2 tablespoons sugar
  • 2 tablespoons vanilla sugar
  • 1 pinch of salt
  • olive oil (for frying)
  • 500 grams cottage cheese
  • 250 millilitres plain flour
  • 1 egg
  • 2 tablespoons sugar
  • 2 tablespoons vanilla sugar
  • 1 pinch of salt
  • olive oil (for frying)

Method

Syrniki or Fried Cheese Pancakes is a community recipe submitted by Vishinka and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Mix together the cottage cheese, egg, and sugar.
  • Stir in all-purpose flour, and work into a soft dough. Turn the dough onto a floured surface, and roll into a 1-inch thick log. Slice the log into 8 pieces, then pat each piece in additional flour to form a patty.
  • Heat the oil over medium heat until hot.
  • Fry the syrniki in hot oil until golden brown on each side, 3 to 4 minutes per side.
  • Mix together the cottage cheese, egg, and sugar.
