Nigella's Chicken Traybake With Bitter Orange And Fennel (from SIMPLY NIGELLA) uses Seville oranges, which are available in January and February. At this time of year mashed potatoes are a good accompaniment and you may like to try the Make-Ahead Mash as this can be assembled in advance. Both dishes cook at the same oven temperature so you can put the dish of potatoes into the oven after the chicken has had its initial 30 minutes of cooking, but remember to take the mashed potatoes out of the fridge 30 minutes beforehand so that they can come to room temperature.

Outside of the winter months you can use a mixture of lemon and orange juice instead of Seville oranges and a large bowl of steamed new (baby white) potatoes would be a good partner.
