Full question
In the Toasted Cheese and Parma Ham Sandwich, Nigella uses figs. We don't like figs so could we use cranberries instead? Dried or fresh? Thank you!
Our answer
Nigella's Toasted Brie, Parma Ham And Fig Sandwich (from AT MY TABLE) is a glorious combination of creamy, sweet and salty ingredients. Toasting the sandwich also brings out the best in the ingredients by melting the gooey cheese and amplifying the sweetness of the figs.
We would not replace the figs with fresh or dried cranberries as cranberies have a slightly sharper edge than figs and also trying to keep either fresh or dried cranberries inside the sandwich would be quite a task. You could make the sandwich without the figs or alternatively use slowly cooked and caramelized onions or an onion marmalade to provide the sweet element. At Christmas you could probably use cranberry sauce for a seasonal variation, as the sugar in the sauce tempers the sharp edge of the cranberries. We would suggest trying Nigella's Redder Than Red Cranberry Sauce.
