Can the American Breakfast Pancakes be made in advance and kept in the fridge?
Our answer
Nigella's American Breakfast Pancakes can be cooked in advance and reheated, though they are never quite as fluffy and light when they are reheated. The pancakes can be kept in the fridge for up to 3 days, or can be frozen for up to 3 months. If freezing, stack the pancakes in airight containers with pieces of baking parchment (parchment paper) between the layers of pancakes.
The pancakes can be rehested in a microwave from chilled, or direct from frozen, by using 10-15 second bursts of power. Or they can be reheated under a preheated grill (broiler) or in a suitable toaster. Make sure the pancakes are reheated until they are piping hot, then cool slightly before serving. We do not recommend making the pancake batter in advance as the raising agents expire if the batter is left to stand for too long.
