Apple And Cinnamon Muffin Loaf

Full question

If I want to make the Apple Cinnamon Muffins in a 9x5 loaf tin. How long would it need to bake? And at what temperature? Would there be any other change in the recipe?

Our answer

Nigella's Apple And Cinnamon Muffins (from KITCHEN) are gently spiced muffins made with spelt flour. The method for making muffins is the same as for quick breads, so most muffin recipes should convert to a loaf tin. Usually a 12 muffin recipe will be enough batter for a 450g/1-pound loaf pan with dimensions of approximately 21x10x6cm/9x5x3 inches. Please note that these muffins do not have that much leavening in them, so the loaf will have a fairly flat top.

However the baking time and temperature need to be adjusted if baking a loaf. Muffins are baked at quite high temperatures and the Apple And Cinnamon Muffins are baked at 200c/400F. At this temperature a loaf will burn on the outside before the centre is cooked through. We suggest lowering the oven temperature to 170c/325F/Fan 150c and baking the loaf for approximately 45-50 minutes. The loaf is baked when a cake tester inserted into the centre comes out clean. As the loaf has a streusel topping you will need to keep an eye on it after the first 30 minutes and if the topping looks like it is starting to catch then tent the top of the loaf with some foil for the remaining cooking time. However, as we have not tried these muffins in loaf form we are unable to guarantee the results.
