Tortillas are thin, round, unleavened Mexican flatbreads. They can be made of corn or wheat, though for this recipe wheat tortillas are used. Tortillas are used for wrapping around ingredients to make burritos, enchiladas, chimichangas and fajitas, used folded in tacos, and they are also used flat as quesadillas or cut up and fried into tortilla chips. Wraps are used mainly for wrapping around ingredients to serve as sandwiches. In the UK some flour tortillas are sold as wraps or "tortilla wraps". This type is fine to use for the Egg Tortilla Pie. But there are also other breads that may be sold as wraps, often as "flatbread wraps" or piadinas. These may be leavened with yeast and are usually thicker than tortillas and are not so suitable for the pie.
