Which chocolate brownie recipe is suitable for freezing? I'm making brownies for the dessert at my wedding and need to make and freeze them in advance!

Our answer

Brownies generally freeze very well and if you are making them for a large event then we would suggest baking the brownies in disposable aluminium trays. Once the brownies have cooled completely, wrap the trays tightly in a double layer of clingfilm (plastic wrap) and a layer of aluminum foil and freeze for up to 3 months. You can then just remove the trays from the freezer the night before, leave overnight at cool room temperature and transport to the party venue in the trays, ready to cut and serve. If you cut the brownies into pieces before freezing then they become more susceptible to freezer burn as smaller items tend to deteriorate in quality more quickly than larger ones when frozen.

We would recommend Nigella's recipe for Brownies (from How To Be A Domestic Goddess). Nigella has used these successfully for parties before as they can be easily cut into smaller pieces. The recipe makes 48 bite-sized pieces or about 12 modest dessert-sized pieces. If you are worried about using nuts then the walnuts can be omitted or replaced with white chocolate chips. The bite-sized brownies also look great piled up on platters and dusted with icing sugar or even strewn with a few fresh flowers for decoration.
