I am making Rocky Road at Christmas and struggling to source amaretti biscuits. Is there an alternative I could use? Thank you.

Our answer

Nigella's Christmas Rocky Road (from NIGELLA CHRISTMAS) is a seasonal version of the Rocky Road Crunch Bars. The bars include glace cherries, brazil nuts and amaretti biscuits.

Amaretti are light, crisp Italian biscuits with a slightly bitter almond flavour and are often given at Christmas. So at this time of year you may be able to find them in Italian delis and larger supermarkets. The closest alternative would be ratafia biscuits, which are smaller in size and darker in colour but have a similar texture and taste to amaretti. They are sold in many UK supermarkets and you should use the same weight of biscuits. If you can't find ratafia then you could use a rich tea biscuit, or similar plain biscuit, as in the original Rocky Road recipe.
