Could I substitute seville orange marmalade instead of oranges and sugar in the No-Churn Bitter Orange Ice Cream? I just made a huge batch and it did not set up as firmly as usual. Still tastes and smells divine of course, so won't go begging!
Our answer
Nigella's No-Churn Bitter Orange Ice Cream (from Nigella Bites and on the Nigella website) is made with a combination of whipped cream, icing (confectioners') sugar and seville orange zest and juice. You could try substituting a not-quite-set marmalade but we are not sure that the results will be quite the same.
Using marmalade or a sugar syrup will introduce some extra water and this will affect the texture of the ice cream, making it harder and icier. Also adjusting the level of sugar will be slightly tricky, though you could do this to taste bearing in mind that the mixture will taste less sweet when frozen. You could however probably use the marmalade in Nigella's Marmalade Pudding Cake (from Kitchen and on the Nigella website) and Nigella's Orange French Toast (from Nigella Express and on the Nigella website) or spoon it over ice cream or use it as a sauce on pancakes for a simple crepes suzette.
