Full question
On TV many years ago Nigella cooked a stovetop topping of blueberries with maple syrup. Would you be able to tell me which recipe this was?
Our answer
Blueberries are available most of the year roumd now, either fresh or frozen, and are a great ingredient as they cook quickly and are naturally quite sweet. We suspect that the recipe you are looking for is Nigella's Blueberry Syrup, that is served alongside pancakes. Unfortunately this recipe is not available on-line at the moment but it was published in NIGELLA EXPRESS.
However, as an alternative you may like to try the blueberry compote from the Lemon Tendercake With Blueberry Compote, which is also cooked on the stove top. This is made with caster (superfine) sugar but we suspect that you could replace the sugar with maple syrup. The compote is wonderful with the cake but equally good with pancakes, yogurt, ice cream or as a topping for cereal.
