Can Cheesecake Be Frozen?

i would like to know if the Chocolate Lime Cheesecake in Nigella Bites can be frozen and if so for how long??
Our answer
Cheesecakes made with mostly full fat (regular) cream cheese should freeze well. The cheesecakes that are unlikely to freeze are uncooked ones set with gelatine and ones with a large quantity of added liquid to the cheesecake batter - such as the Banoffee Cheesecake in Kitchen. As the Chocolate Lime Cheesecake only has some lime juice and zest added along with the eggs and sugar it should freeze well.
To freeze a cheesecake cool and chill it but leave it in its springform tin (pan). Wrap the cheesecake (still in its pan) tightly in a double layer of clingfilm (plastic wrap) and a double layer of foil. Freeze for up to 1 month. Thaw the cheesecake overnight in the refrigerator and eat within 2 days. If the cheesecake has a fruit topping then freeze and thaw this separately and carefully spread it onto the cheesecake after the cheesecake has defrosted.
