Can I Add Raspberries To The Flourless (or Gluten-Free) Chocolate Brownies?

Asked by Katiebakes12. Answered on 5th July 2024

Full question

Can I add some raspberries instead of walnuts to the Gluten-Free Brownies? I am worried they might affect the moisture levels and, as a result, the overall texture. Thank you!

Our answer

Nigella's Flourless Chocolate Brownies (from NIGELLA EXPRESS are made with ground almonds (almond meal), which helps to make them moist and squidgy. If you add fresh fruit, such as raspberries or blueberries, to cake batters then they will let out some liquid as they cook and this will increase the liquid content of the batter overall. Unfortunately, as the brownies are gluten free and so are already more tender than those made with regular flour, it will make them quite difficult to handle.

If you wanted to use a fruit rather than a nut then you might want to try using dried cherries that have been plumped up in a little kirsch, rum or apple juice. Nigella also has a Chocolate Raspberry Pudding Cake that uses fresh raspberries and we note that one of the Comments mentions making a gluten-free version of this cake with a combination of ground almonds and gluten-free flour. We assume they also added some baking powder (you would need about 1.5 teaspoons). However, as we have not tried this option ourselves, we are unable to guarantee the results.
