I want to add rum to Nigella's Vanilla Fudge. How much should I add and at what stage? Thank you.
Our answer
Nigella's Vanilla Fudge is a traditional fudge recipe made by boiling condensed milk with sugar and butter. The cooked fudge is flavoured with vanilla.
It is possible to add rum to the fudge and you would do this after the fudge has boiled and before it is beaten, in step 4. We would suggest adding up to 3 tablespoons for a buttery rum flavour. Be very careful when you add the rum as the fudge mixture will bubble up as the alcohol is added and could spit or splash, so make sure that your arm and hand are well protected. We would also suggest that you still add some vanilla extract, as this will complement the rum, but reduce this to 1 teaspoon. If you don't want to use alcohol then you can use rum flavouring and we would suggest a combination of 1 teaspoon of vanilla extract and 1½ teaspoons of rum flavouring.
