Can I Bake A Rectangular Clementine Cake?

Full question

I would like to use a larger flat pan like a 9 x 13 inches to make the Clementine Cake, so I could cut it into squares . Is this possible? Thanks.

Our answer

Nigella's Clementine Cake (from HOW TO EAT) is a gluten-free cake that is made with whole cooked clementines, eggs, sugar and almonds. The cake is baked in a 20cm/8-inch springform pan that has a capacity of around 1.9 litres (8 cups).

Unfortunately both 9 x 13-inch and 7 x 11-inch rectangular pans are too big for a single quantity of the cake batter, unless you want a very thin cake. An 8-inch (20cm) deep square cake pan or a shallow 9-inch (23cm) square pan would be better options as they have a similar capacity to the springform pan. For the square cakes the baking time should be similar, at about an hour, and you will probably need to cover the top after around 40 minutes to prevent it from becoming too dark. Also give the pan a half turn at the same time as the corners of a square pan will cook quickly. If you are using the rectangular pans then you would need to make 1 1/4 times the recipe for a 7 x 11-inch pan and 1 3/4 times the recipe for a 9 x 13-inch pan. Our main concern with this size would be that the cake baking time will increase and so will the risk of the edges and corners of the cake becoming too dark, as well as the top. So if possible, try to bake the cake in one of the square pans instead.
