Can I Bake The Red Velvet Cake In A Springform Cake Pan?

Hi, I was wondering if I can make the Red Velvet Cake in one 9-inch springform pan rather than separating into two? If so, would it be the same oven temperature?

Our answer

Nigella's Red Velvet Cupcakes (from KITCHEN) recipe makes 24 cupcakes or a 25cm/10-inch layer cake. Usually the layer cake would be baked in two sandwich tins or cake pans, which are shallower than a springform pan.

Our preference would be to use the pans suggested. But if you only have a 23cm/9-inch springform pan then you need to make sure that the batter doesn't come more than halfway up the sides of the pan (bake any extra as cupcakes). The oven temperature is already quite low for sponge cakes, at 170c/150c fan/325F, so we would not adjust this. The baking time for a larger cake is likely to be 35-40 minutes. Keep an eye on the cake but don't open the oven too early, as it can collapse if it is not properly set. When the cake is baked it should be risen, firm to the touch and a cake tester inserted into the centre should come out clean. However, please note that as we have not baked the cake in a springform pan before, we are unable to guarantee the results.
