Can I Change Liquorice Pudding To Chocolate Pudding?

Asked by rakitarajput. Answered on 10th May 2013

Full question

I would like to know if I can substitute liquorice with chocolate. As in New Delhi, India I cannot find liquorice and would like to make Nigella's Liquorice Pudding.

Our answer

Nigella's Liquorice Pudding (from Nigellissima) is a liquorice flavoured custard that is set with only cornflour (cornstarch) and no with egg yolks. The pudding uses liquorice pellets, which not only flavour the custard but also help it to set. Unfortunately chocolate would not be a good substitute as if you directly substitute liquorice with chocolate then the quantity of chocolate used will be too low in this recipe to flavour and set the pudding.

However if you would like to try a chocolate pudding in a similar syle then we would suggest trying Nigella's Budino Di Cioccolato (from Nigella Express). This is an intensely chocolatey pudding made with both dark (bittersweet) chocolate and cocoa powder.
