Full question
Can the American Breakfast Pancakes be cooked, frozen and reheated? Also, can they be cooked and then stored and reheated? Thank you.
Our answer
Nigella's American Breakfast Pancakes (from HOW TO BE A DOMESTIC GODDESS) are thick, spongy pancakes that are perfect served with crisp bacon and maple syrup. The pancakes are at their best when freshly made, as the texture becomes slightly more dense as they cool, but it is possible to cook them in advance and refrigerate or freeze them.
Cool the pancakes and then refrigerate or freeze them in airtight containers. The panackes will keep in the fridge for up to 3 days. If freezing the pancakes you may like to put pieces of baking parchment (parchment paper) in between the pancakes if you are stacking them in the containers as this will make it easier to take out a few at a time. They can be frozen for up to 3 months. The pancakes can be reheated from chilled or frozen in a microwave, using short 10-15 second bursts of full power. They can also be heated under a grill (broiler), turning frequently or in a toaster if it has a suitable setting. Always make sure that the pancakes are reheated until piping hot and cool slightly before serving.
